Ingredients

  • 1 cup all-purpose flour
  • 1 cup rye flour
  • 1 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups nonfat yogurt
  • 2 tablespoons brown sugar
  • 1/4 cup light molasses
  • 1 1/2 cups old fashioned oats
  • 1 cup raisins

Instructions

  1. Lightly spray a 9 x 5-inch loaf pan with nonstick spray.
  2. Combine all-purpose flour, rye flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, beat nonfat yogurt, brown sugar, and molasses until smooth.
  4. Add oats to the wet mixture and mix well.
  5. Add the flour mixture and raisins, stirring to combine. The batter will be very dry and require some effort to mix.
  6. Pour the batter into the prepared loaf pan.
  7. Let the batter rest for 20 minutes.
  8. Bake in a preheated 350°F (175°C) oven for 45 to 55 minutes, until lightly browned and edges pull away from the sides of the pan.
