Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cups cooking oil
  • 4 eggs
  • 2 tsp vanilla
  • 1 cup crushed pineapple, drained
  • 2 cups raw carrots, grated

Instructions

  1. Sift together all dry ingredients: flour, sugar, baking soda, cinnamon, salt, and baking powder.
  2. Add remaining ingredients in the order listed, mixing after each addition: cooking oil, eggs, vanilla, crushed pineapple, and grated carrots.
  3. Pour batter evenly into 3 greased layer pans.
  4. Bake at 350°F (175°C) until a toothpick inserted into the center comes out clean, approximately 30 minutes.
  5. Cool the cakes before frosting.
