Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 eggs
  • 2/3 cup Sugar Twin brown sugar substitute
  • 1/3 cup vegetable oil
  • 1/2 cup water
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini with skin on

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. Sift together flour, cinnamon, baking powder, baking soda, and salt.
  4. Beat eggs in a large bowl.
  5. Gradually add Sugar Twin brown sugar substitute, beating until thick.
  6. Add the flour mixture to the liquid ingredients all at once and stir just until combined.
  7. Stir in grated carrots and zucchini.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 45 to 50 minutes or until a knife inserted in the center comes out clean.
  10. Cool in the pan on a wire rack for 10 minutes.
  11. Remove bread from the pan and cool completely.
  12. Cut into 16 slices and serve.
