Ingredients

  • 1 1/2 cups sliced carrots
  • 3/4 cup potato
  • 1 to 2 tablespoons skim milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion
  • 2 teaspoons margarine
  • 1/4 teaspoon dill weed
  • dash of pepper

Instructions

  1. In a saucepan, bring 2 inches of water to a boil.
  2. Add sliced carrots and potato; cover and simmer about 25 minutes or until very tender.
  3. Drain the vegetables.
  4. Beat or mash the vegetables until smooth.
  5. Add skim milk, salt, onion, margarine, dill weed, and a dash of pepper.
  6. Reheat if necessary and serve.
