Ingredients

  • 1 lb. carrots
  • 1/4 cup butter, melted
  • 1/4 cup pineapple or orange juice
  • 2 tablespoons brown sugar
  • 1/4 teaspoon dry mustard
  • 1 teaspoon salt
  • Almonds (for garnish, optional)

Instructions

  1. Scrape the carrots and cut into diagonal slices, about 1/4 to 1/2-inch thick.
  2. Place the sliced carrots in an ungreased baking dish.
  3. Stir together melted butter, pineapple or orange juice, brown sugar, dry mustard, and salt.
  4. Pour the sauce over the carrots.
  5. Bake, covered, at 375°F for 30 to 40 minutes until the carrots are tender.
  6. Alternatively, microwave the carrots with a small amount of water until almost done, then add the sauce and cook for 2 to 3 more minutes.
  7. Garnish with toasted almonds or pecans before serving.
