Ingredients

  • 1 lb carrots
  • 2 Tbsp tarragon spice
  • 3 to 4 Tbsp margarine or butter
  • 1/4 cup brown sugar

Instructions

  1. Prepare carrots as per instructions on the bag, or boil fresh carrots for 10 minutes, then cover and simmer for an additional 5 minutes, or until tender-crisp.
  2. While carrots are cooking, simmer 3 to 4 tablespoons of butter in a small saucepan.
  3. When butter is melted, stir 2 tablespoons of tarragon into the butter.
  4. Remove the butter-tarragon mixture from the stove top; stir in the brown sugar.
  5. Remove the cooked carrots from the stove top and drain.
  6. Place carrots in a serving bowl and pour the tarragon-butter-brown sugar mixture over them.
  7. Mix everything together, cover, and serve.
