- Prepare carrots as per instructions on the bag, or boil fresh carrots for 10 minutes, then cover and simmer for an additional 5 minutes, or until tender-crisp.
- While carrots are cooking, simmer 3 to 4 tablespoons of butter in a small saucepan.
- When butter is melted, stir 2 tablespoons of tarragon into the butter.
- Remove the butter-tarragon mixture from the stove top; stir in the brown sugar.
- Remove the cooked carrots from the stove top and drain.
- Place carrots in a serving bowl and pour the tarragon-butter-brown sugar mixture over them.
- Mix everything together, cover, and serve.
