Ingredients

  • 1 stick margarine
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 can cream-style corn
  • 1 can whole kernel corn
  • 1 box Jiffy cornbread mix
  • 2 eggs, beaten
  • 1 large sour cream
  • 2 cups shredded cheese

Instructions

  1. Melt the margarine in a skillet.
  2. Saute chopped onions and bell peppers until tender.
  3. Mix cornbread mix with beaten eggs, cream-style corn, and whole kernel corn.
  4. Add the sautéed vegetables to the cornbread mixture and combine well.
  5. Pour the mixture into a greased 9 x 13-inch casserole dish.
  6. Bake at 375°F (190°C) for 20 minutes.
  7. Whip the sour cream until creamy and spread over the baked casserole.
  8. Sprinkle shredded cheese evenly on top of the sour cream.
  9. Return the casserole to the oven, reduce temperature to 350°F (175°C), and bake for an additional 10 to 15 minutes until cheese is melted and bubbly.
