Ingredients

  • 4 lean pork chops
  • 1 large onion, sliced
  • 1 large green pepper, sliced in rings
  • 1 large tomato, sliced
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 cup boiling water
  • 3/4 cup uncooked rice

Instructions

  1. Place rice in the casserole or covered dish.
  2. Arrange the pork chops on top of the rice.
  3. Season the chops with salt and pepper.
  4. Place a slice of onion, tomato, and green pepper on each chop.
  5. Pour boiling water over to moisten the rice.
  6. Cover tightly and bake at 350°F for 1 1/2 hours.
