Cat Fish Stew

Ingredients

  • 1/2 lb fat back
  • 4 lbs onions
  • 3 cups Campbell tomato soup
  • 1/2 bottle catsup
  • salt and pepper to taste
  • 3 1/2 lbs dressed catfish

Instructions

  1. Fry the fat back until crispy, then remove from the grease and cut into pieces.
  2. Chop onions and sauté in the bacon grease until they are clear.
  3. Add Campbell's tomato soup and catsup to the onions, season with salt and pepper, and simmer for about 1 hour, stirring often to prevent sticking.
  4. Continue cooking until the catfish are fork tender.
  5. Serve the stew over rice.
