Ingredients

  • 6 qt. green tomatoes, quartered
  • 1 c. red or green pepper, chopped
  • 2 qt. onions, chopped
  • 1/2 c. pickling salt
  • 1/2 to 1 c. jalapeno pepper, chopped

Instructions

  1. Combine green tomatoes, onions, and chopped peppers in a large bowl.
  2. Stir in pickling salt and let sit overnight.
  3. Rinse the mixture with clear water and drain well.
  4. Prepare a syrup as desired for canning or serving.
