Ingredients

  • 3 lb. potatoes
  • 1 clove garlic
  • 1/3 c. butter
  • 2 egg yolks
  • 1/2 c. cream or milk
  • salt and pepper to taste
  • 1/2 lb. sautéed mushrooms
  • 1/4 c. minced fresh parsley or 1 Tbsp. dried

Instructions

  1. Boil potatoes until tender with salt and the garlic clove.
  2. Mash the potatoes well with butter.
  3. Add the egg yolks, cream or milk, sautéed mushrooms, and minced parsley.
  4. Pile the mixture into a baking dish.
  5. Bake at 350°F until browned.
