Ingredients

  • 1 c. celery, sliced thin
  • 2 c. cauliflower, sliced
  • 1 (13 oz.) can chicken broth
  • 1 c. half and half or evaporated milk
  • 1 (10 3/4 oz.) can cream of potato soup
  • 1/4 c. water
  • 2 Tbsp. cornstarch
  • 1/8 tsp. white pepper
  • 2 c. cooked ham, diced

Instructions

  1. In a large uncovered saucepan, cook celery and cauliflower in chicken broth until almost tender (about 10 minutes). Set aside.
  2. In a mixing bowl, gradually stir milk into undiluted cream of potato soup.
  3. Blend water, cornstarch, and white pepper together and stir into the soup mixture.
  4. Pour the soup mixture over the cauliflower and celery in the saucepan.
  5. Stir in the cooked ham.
  6. Simmer over low heat for 10 minutes.
  7. Just before serving, stir in cheese.
