A flavorful Cajun-style cauliflower bake featuring spicy stewed tomatoes, melted American cheese, and crunchy bread crumbs, perfect for a comforting vegetarian main or side dish.

Ingredients

  • 1 medium head cauliflower, cooked
  • 1 teaspoon salt
  • dash of pepper
  • 1 (No. 2) can Cajun style stewed tomatoes
  • 1 cup grated American cheese
  • soft bread crumbs
  • butter or margarine

Instructions

  1. Place the cooked cauliflower in a shallow baking dish.
  2. Add salt and pepper to the Cajun-style stewed tomatoes and boil rapidly until most of the liquid evaporates.
  3. Pour the tomato mixture over the cauliflower.
  4. Top with grated American cheese, then sprinkle with soft bread crumbs.
  5. Dot with butter or margarine.
  6. Bake in a 325°F oven for about 15 minutes until piping hot.
