Cauliflower Cheese Pudding

Ingredients

  • 1 medium cauliflower
  • 1 1/2 cups half and half
  • 3 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded sharp Cheddar cheese
  • 1 red pepper, sliced

Instructions

  1. Rinse cauliflower and cut into flowerets.
  2. Place cauliflower in a microsafe shallow dish in a single layer just to fit.
  3. Microwave on High power for 4 minutes, covered tightly.
  4. In a bowl, combine half and half, eggs, salt, pepper, and cheese.
  5. Pour the mixture over the steamed cauliflower.
  6. Add sliced red pepper on top.
  7. Sprinkle with paprika and a little extra cheese.
  8. Microwave on High power, uncovered, for 3 minutes.
  9. Stir slightly to blend outer cooked custard with inner custard.
  10. Microwave for 3 to 4 minutes longer on High power.
  11. Cover tightly and microwave on High power for 3 to 4 minutes, until custard is set.
  12. Remove from microwave.
  13. Uncover carefully and serve.
