- Rinse cauliflower and cut into flowerets.
- Place cauliflower in a microsafe shallow dish in a single layer just to fit.
- Microwave on High power for 4 minutes, covered tightly.
- In a bowl, combine half and half, eggs, salt, pepper, and cheese.
- Pour the mixture over the steamed cauliflower.
- Add sliced red pepper on top.
- Sprinkle with paprika and a little extra cheese.
- Microwave on High power, uncovered, for 3 minutes.
- Stir slightly to blend outer cooked custard with inner custard.
- Microwave for 3 to 4 minutes longer on High power.
- Cover tightly and microwave on High power for 3 to 4 minutes, until custard is set.
- Remove from microwave.
- Uncover carefully and serve.
