Ingredients

  • 2 cups fresh cauliflower flowerets
  • 1/2 cup sliced onion
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 cup fresh or frozen snow peas
  • 1 sweet red pepper, cut in strips
  • 1/2 cup sliced fresh mushrooms
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt

Instructions

  1. Arrange cauliflower flowerets in a steamer basket.
  2. Place over boiling water and cover.
  3. Steam for 8 minutes, then drain and set aside.
  4. In a skillet, heat olive oil over medium heat.
  5. Add sliced onion and minced garlic, sauté until fragrant.
  6. Add sliced mushrooms and cook until tender.
  7. Stir in red pepper strips and snow peas, cook for 2-3 minutes.
  8. Sprinkle with dried oregano and salt, then toss to combine.
  9. Serve hot as a main or side dish.
