Ingredients

  • 4 peppers
  • 2 cups onions, cooked and drained
  • 2 teaspoons celery
  • 2 teaspoons turmeric
  • 8 cups cucumbers, salted and soaked for 1 hour
  • 2 cups vinegar
  • 3 cups sugar
  • 3-inch cinnamon sticks

Instructions

  1. Let the cucumbers stand in salt water for 1 hour, then drain.
  2. Cook the cauliflower until tender, then set aside.
  3. In a large pot, combine vinegar, sugar, turmeric, celery, and cinnamon sticks.
  4. Bring the mixture to a boil and simmer for 20 minutes.
  5. Add the cooked cauliflower to the vinegar mixture and cook for an additional few minutes to absorb flavors.
