Ingredients

  • 4 cups dried white beans, soaked overnight, rinsed and drained
  • 3 large carrots, sliced 1/2-inch thick
  • 4 to 5 stalks celery, chopped
  • 2 to 3 medium onions, chopped
  • 2 to 3 bay leaves
  • 1.5 to 2 teaspoons thyme leaves
  • 1 teaspoon garlic powder
  • 1 lamb chop
  • salt and pepper

Instructions

  1. Brown the lamb chop in a large pot.
  2. Sauté all vegetables in the drippings from the lamb.
  3. Add all ingredients to the pot and cover with water.
  4. Bring to a slow boil.
  5. Cook until beans are soft, replenishing water as needed, approximately 1.5 to 2 hours.
  6. Serve over rice.
  7. Add salt and pepper to taste.
