Ingredients

  • 8 medium potatoes
  • 3 Tbsp lemon juice
  • 1/2 cup vegetable oil
  • 1 onion, chopped
  • 2 sliced tomatoes
  • 1 Tbsp ground hot pepper

Instructions

  1. Boil potatoes and mash well.
  2. Add lemon juice, vegetable oil, salt, and hot pepper to the mashed potatoes.
  3. Place a layer of the potato mixture in the bottom of a serving dish.
  4. Saute chopped onion and spread over the potato layer.
  5. May add other cooked, chopped fine vegetables on top.
  6. Cover with a second layer of potatoes.
  7. Sprinkle with grated cheese if desired.
  8. Garnish with olives, sliced hard-boiled eggs, and serve on lettuce.
