Ingredients

  • 2 1/4 cups oatmeal
  • 2 packages Brickle chips
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 cup margarine or butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla

Instructions

  1. Combine oatmeal and Brickle chips.
  2. Sift together flour, baking powder, and salt.
  3. In a mixing bowl, beat brown sugar, granulated sugar, and softened margarine until smooth.
  4. Add eggs and vanilla, and continue beating until blended.
  5. Gradually add the dry ingredients and beat until combined.
  6. Stir in the oatmeal and Brickle chip mixture until well mixed.
  7. Drop spoonfuls of dough onto a greased cookie sheet, spacing them 2 inches apart.
  8. Bake in a 350°F (175°C) oven for 10 minutes or until slightly brown.
  9. Cool for one minute on the baking sheet.
  10. Transfer cookies to a cooling rack and let cool completely.
