Champ'S Chicken

Creamy chicken and vegetable scramble with melted mozzarella, served over rice for a satisfying and flavorful meal suitable for any time of day.

Ingredients

  • 2 chicken breasts
  • 3 eggs
  • 2 cups vegetables of choice, chopped
  • 6 medium mushrooms, diced
  • 1/4 cup onions, diced
  • 1 1/2 ounces mozzarella cheese
  • 2 ounces rice, boiled

Instructions

  1. Stew the vegetables, mushrooms, and onions in a small amount of water.
  2. Mix the diced chicken and eggs together.
  3. Drain the vegetable mixture from the water and add to the chicken and eggs.
  4. Stir the mixture in a nonstick frying pan coated with Pam spray.
  5. Add mozzarella cheese and blend well until melted and combined.
  6. Serve the mixture over boiled rice.
