Ingredients

  • 2 1/2 cups sifted flour
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 (28 oz.) jar Borden mincemeat
  • 1 cup walnuts, chopped
  • 2 cups mixed candied fruit

Instructions

  1. Butter a 9-inch tube pan.
  2. Line the pan with waxed paper.
  3. Butter the paper.
  4. Sift the flour and baking soda together.
  5. Combine eggs, mincemeat, milk, candied fruit, and chopped nuts in a bowl.
  6. Fold in the dry ingredients gently.
  7. Pour the batter into the prepared pan.
  8. Bake in a slow 300°F (150°C) oven for 2 hours or until the center springs back and the top is golden brown.
  9. Allow the cake to cool in the pan.
  10. Turn out the cake and remove the waxed paper.
