Delightful layered graham cracker bars with coconut and nut fillings, topped with creamy lemon icing—perfect for satisfying sweet cravings at gatherings or casual treats.

Ingredients

  • 2 boxes Honey Graham crackers
  • 1 c. margarine
  • 1 c. granulated sugar
  • 1/2 c. milk
  • 1 egg
  • 1 c. graham cracker crumbs
  • 1 c. chopped walnuts or pecans
  • 1 c. shredded coconut
  • 1/2 c. margarine, melted
  • 2 c. powdered sugar

Instructions

  1. Line the bottom of a 10 x 15-inch cookie sheet with whole graham crackers.
  2. Mix together 1 cup margarine, sugar, milk, and egg. Bring to a full boil and remove from heat.
  3. Add graham cracker crumbs, chopped walnuts or pecans, and shredded coconut to the mixture.
  4. Spread the mixture over the graham crackers in the pan; cover with a second layer of Honey Graham crackers.
  5. Mix together 1/2 cup margarine, powdered sugar, and juice of one lemon to make the icing.
  6. Spread the icing over the layered graham crackers.
  7. Cover and refrigerate overnight.
  8. Cut into small bar shapes. Bars may be frozen.
