Ingredients

  • 1/4 cup milk
  • 2 tablespoons margarine
  • 1 (10 3/4 oz) can condensed cream of broccoli soup
  • 1 1/3 cups all-purpose flour
  • 2/3 cup yellow cornmeal
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 large egg
  • 1/3 cup whole kernel corn
  • 1/4 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8-inch square pan.
  3. In a small saucepan, combine condensed cream of broccoli soup and margarine.
  4. Heat over low heat until butter melts.
  5. Remove from heat and stir in milk.
  6. In a large bowl, combine all-purpose flour, cornmeal, sugar, and baking powder.
  7. Add the soup mixture, lightly beaten egg, whole kernel corn, and shredded Cheddar cheese.
  8. Stir until batter is just combined, do not overmix.
  9. Scoop batter into the prepared pan.
  10. Bake for 30 to 35 minutes, until golden and cooked through.
