Cheddar Carrots

Ingredients

  • 1 1/2 lb sliced carrots
  • 1 onion diced
  • 2 Tbsp butter
  • 6 oz Longhorn cheese grated
  • 8 oz sharp Cheddar cheese grated
  • 1 can cream of celery soup

Instructions

  1. Heat a skillet over medium heat and melt butter.
  2. Add diced onion, sauté until translucent.
  3. Stir in sliced carrots and cook until just tender, about 5 minutes.
  4. Transfer mixture to a baking dish.
  5. Spread the remaining butter, then add grated Longhorn and Cheddar cheeses.
  6. Pour the can of cream of celery soup over the top.
  7. Bake at 350°F for 25 to 30 minutes, or until bubbly and golden.
  8. Let cool slightly before serving.
