Ingredients

  • 1 lb. chicken breast
  • 2 c. water
  • 3 green onions, chopped
  • 3/4 c. Cheddar cheese crackers
  • 1 c. elbow macaroni
  • 1 c. shredded Cheddar cheese
  • 1/2 c. cashews
  • 2 cans cream of chicken soup

Instructions

  1. Simmer chicken for 25 minutes.
  2. Drain broth and set aside.
  3. Cool chicken and tear into chunks.
  4. Cook macaroni in water until al dente.
  5. Drain macaroni and place in a 2-quart casserole dish.
  6. Sprinkle shredded Cheddar cheese over macaroni.
  7. Top with torn chicken pieces.
  8. Thin cream of chicken soup with 2/3 cup of broth from drained chicken for each can of soup.
  9. Pour the soup mixture over the chicken.
  10. Sprinkle crushed Cheddar cheese crackers on top.
  11. Bake at 350°F for 30 to 40 minutes until bubbly and golden.
