Ingredients

  • 1 stick unsalted butter
  • 2 cups Cheddar cheese
  • 1 large egg yolk
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2/3 cup all-purpose flour
  • 2/3 cup pecans

Instructions

  1. Preheat oven to 350°F.
  2. Beat together butter and cheddar cheese in a bowl with an electric mixer until smooth.
  3. Beat in the egg yolk, salt, and cayenne pepper.
  4. Mix in the all-purpose flour and chopped pecans until well combined.
  5. Roll rounded teaspoons of dough into balls and arrange 3 inches apart on buttered baking sheets.
  6. Flatten each ball into a 1 1/2-inch disk.
  7. Bake in the middle of the oven until golden brown, about 15 to 18 minutes.
