Ingredients

  • 1/2 cup onion, chopped
  • 1 1/4 cups water
  • 10 oz. frozen cauliflower
  • 1 (4 oz.) can mushrooms
  • 2 teaspoons chicken bouillon granules
  • 1/2 teaspoon dry mustard
  • 3/4 cup skim milk
  • 4 teaspoons cornstarch
  • 2 cups (8 oz.) American cheese, shredded
  • 2 tablespoons chopped pimento

Instructions

  1. In a saucepan, cook the chopped onion in water until tender.
  2. Add the frozen cauliflower, undrained mushrooms, chicken bouillon granules, and dry mustard.
  3. Bring the mixture to a boil.
  4. Reduce heat; cover and simmer for about 8 minutes, or until the cauliflower is just tender.
  5. In a screw-top jar, combine the skim milk and cornstarch; shake well.
  6. Stir the milk mixture into the hot vegetable mixture.
  7. Cook and stir over medium heat until thickened and bubbly.
  8. Stir in the shredded American cheese and chopped pimento.
  9. Heat through, stirring to melt the cheese.
