Cheese-Bacon Stuffed Potatoes are hearty, cheesy baked potatoes filled with savory bacon, mushrooms, and green onions, perfect for a comforting family meal or casual gathering.

Ingredients

  • 4 large Idaho potatoes
  • 3 slices bacon
  • 8 oz. mushrooms
  • 6 oz. Cheddar cheese
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1 Tbsp. butter
  • 8 oz. low-fat sour cream
  • 4 green onions

Instructions

  1. Preheat oven to 375°F.
  2. Bake potatoes for 1 to 1 1/2 hours or until done.
  3. Leave the oven on.
  4. Saute chopped bacon in a skillet until crisp. Add chopped mushrooms and sliced green onions; cook for 4 to 5 minutes until mushrooms are lightly cooked.
  5. Transfer the mushroom mixture to a bowl.
  6. Cut the baked potatoes in half and scoop out the flesh, leaving 1/2 inch on the skin.
  7. Mash the potato flesh until smooth in a bowl.
  8. Stir in the mushroom mixture, shredded Cheddar cheese, black pepper, salt, and butter.
  9. Spoon the mixture back into the potato skins and place on a baking sheet.
  10. Bake in the preheated 375°F oven for 15 minutes or until piping hot.
  11. Top each potato with sour cream and serve.
