Ingredients

  • 6 3/4 to 7 1/4 cups all-purpose flour
  • 2 packages active dry yeast
  • 2 cups milk
  • 1/4 cup sugar
  • 1/4 cup butter or margarine
  • 1 teaspoon salt
  • 3 eggs
  • 2 cups shredded Cheddar cheese

Instructions

  1. Combine 3 cups of flour and yeast in a mixing bowl.
  2. Heat milk, sugar, butter, and salt until warm (115° to 120°), stirring constantly, until butter is almost melted.
  3. Add the warm milk mixture to the flour and yeast mixture.
  4. Add eggs and shredded Cheddar cheese, then beat with an electric mixer on low speed for 30 seconds, scraping the bowl.
  5. Beat on high speed for 3 minutes.
  6. Stir in as much remaining flour as possible with a spoon.
  7. Turn the dough onto a lightly floured surface and knead in enough remaining flour to make a smooth, elastic, and moderately stiff dough (about 6 to 8 minutes).
  8. Divide the dough into three equal portions and shape each into a ball.
  9. Wrap each ball in clear plastic wrap and transfer to freezer bags.
  10. Seal, label, and freeze.
