- Combine 3 cups of flour and yeast in a mixing bowl.
- Heat milk, sugar, butter, and salt until warm (115° to 120°), stirring constantly, until butter is almost melted.
- Add the warm milk mixture to the flour and yeast mixture.
- Add eggs and shredded Cheddar cheese, then beat with an electric mixer on low speed for 30 seconds, scraping the bowl.
- Beat on high speed for 3 minutes.
- Stir in as much remaining flour as possible with a spoon.
- Turn the dough onto a lightly floured surface and knead in enough remaining flour to make a smooth, elastic, and moderately stiff dough (about 6 to 8 minutes).
- Divide the dough into three equal portions and shape each into a ball.
- Wrap each ball in clear plastic wrap and transfer to freezer bags.
- Seal, label, and freeze.
