Ingredients

  • 1 cup oil
  • 4 eggs
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 teaspoons soda
  • 2 teaspoons baking powder
  • 1/2 cup chopped nuts

Instructions

  1. Combine oil, eggs, and sugar in a mixing bowl and beat until well blended.
  2. In a separate bowl, whisk together flour, salt, soda, and baking powder.
  3. Gradually add the dry ingredients to the wet mixture, then mix in vanilla and chopped nuts; stir until combined.
  4. Fold in 2 cups of cashew pieces into the batter.
  5. Pour the batter into a greased bundt cake pan.
  6. Bake in a preheated oven at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
