- Dissolve the lemon Jell-O in boiling water and chill until slightly thickened.
- Cream together the cream cheese, sugar, and vanilla until smooth.
- Add the gelatin mixture to the cream cheese mixture and blend well.
- Fold in the whipped condensed milk.
- Mix the crumbled graham crackers and melted oleo together.
- Pour two-thirds of the cracker mixture into the bottom of a 9 x 13-inch pan.
- Add the filling over the cracker crust.
- Sprinkle the remaining cracker mixture over the top of the filling.
- Chill the cheesecake for several hours or overnight before serving.
