Ingredients

  • 1 pkg. lemon Jell-O
  • 1/2 c. boiling water
  • 1 (8 oz.) cream cheese
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1 c. condensed milk, whipped
  • 3 graham crackers, crumbled
  • 1/2 c. oleo, melted

Instructions

  1. Dissolve the lemon Jell-O in boiling water and chill until slightly thickened.
  2. Cream together the cream cheese, sugar, and vanilla until smooth.
  3. Add the gelatin mixture to the cream cheese mixture and blend well.
  4. Fold in the whipped condensed milk.
  5. Mix the crumbled graham crackers and melted oleo together.
  6. Pour two-thirds of the cracker mixture into the bottom of a 9 x 13-inch pan.
  7. Add the filling over the cracker crust.
  8. Sprinkle the remaining cracker mixture over the top of the filling.
  9. Chill the cheesecake for several hours or overnight before serving.
