Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup yellow cornmeal
  • 1 egg, beaten
  • 2 tablespoons melted shortening
  • 2 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 cup shredded Cheddar cheese
  • 3/4 cup milk

Instructions

  1. Combine flour, baking powder, salt, sugar, and cornmeal in a bowl; stir in shredded Cheddar cheese.
  2. Add beaten egg, milk, and melted shortening to the dry ingredients; stir just to moisten.
  3. Fill greased 2-inch muffin cups two-thirds full.
  4. Bake at 400°F (200°C) for 25 minutes or until golden brown.
