- Cook the jumbo shells according to the package directions.
- Drain the shells and let them cool in a single layer on waxed paper or aluminum foil.
- In a large bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, eggs, chopped parsley, oregano, salt, and pepper.
- Fill each shell with about 2 tablespoons of the cheese mixture.
- Spread a thin layer of spaghetti sauce on the bottom of a 13 x 9 x 2-inch rectangular pan.
- Place the filled shells, open side down, in a single layer in the pan.
- Pour the remaining spaghetti sauce over the shells.
- Sprinkle with additional Parmesan cheese if desired.
