Ingredients

  • 12 oz. jumbo shells
  • 2 lb. Ricotta cheese
  • 8 oz. shredded Mozzarella cheese
  • 3/4 cup grated Parmesan cheese
  • 3 eggs
  • 1 Tbsp. chopped fresh parsley
  • 3/4 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 32 oz. spaghetti sauce

Instructions

  1. Cook the jumbo shells according to the package directions.
  2. Drain the shells and let them cool in a single layer on waxed paper or aluminum foil.
  3. In a large bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, eggs, chopped parsley, oregano, salt, and pepper.
  4. Fill each shell with about 2 tablespoons of the cheese mixture.
  5. Spread a thin layer of spaghetti sauce on the bottom of a 13 x 9 x 2-inch rectangular pan.
  6. Place the filled shells, open side down, in a single layer in the pan.
  7. Pour the remaining spaghetti sauce over the shells.
  8. Sprinkle with additional Parmesan cheese if desired.
  9. Cover the pan with foil and bake at 350°F for about 35 minutes, or until hot and bubbly.
