Ingredients

  • 2 1/2 cups boiling water
  • 1 (6 oz.) package orange flavored gelatin
  • 1/2 cup sugar
  • 8 oz. cream cheese, softened
  • 2 (13 1/4 oz.) cans crushed pineapple
  • 2 cups shredded Cheddar cheese
  • 2 cups creamed cottage cheese
  • 2 teaspoons lemon juice
  • salad greens
  • Honey Dressing
  • crackers

Instructions

  1. Pour boiling water over the gelatin in a large bowl, add sugar, and stir until dissolved.
  2. Beat in the softened cream cheese until smooth.
  3. Stir in the pineapple with syrup, shredded Cheddar cheese, creamed cottage cheese, and lemon juice.
  4. Pour the mixture into a 12-cup mold.
  5. Refrigerate until firm, about 8 hours.
  6. Unmold the mold onto salad greens and serve with Honey Dressing and crackers.
