Ingredients

  • 1 cup quick cooking grits
  • 1/2 cup butter
  • 1/2 teaspoon black pepper
  • 1 cup grated sharp Cheddar cheese
  • 3 cups boiling water
  • 3/4 teaspoon salt
  • 4 eggs
  • 1 cup milk

Instructions

  1. In a large pot, put the quick cooking grits in 3 cups of boiling water.
  2. Cook over low heat until very thick.
  3. Remove from heat and add butter, stirring until melted.
  4. Add salt and black pepper, stirring to combine.
  5. Mix eggs into milk separately.
  6. Add the egg-milk mixture to the cooked grits and mix well.
  7. Stir in the grated sharp Cheddar cheese.
  8. Pour the mixture into a greased 3-quart deep casserole dish.
  9. Bake uncovered in a 350°F oven for 40 to 50 minutes until golden and set.
