Cheese stuffed mushroom caps offer a savory, cheesy bite with tender mushrooms and a hint of paprika, perfect as an appetizer or party snack for cheese lovers.

Ingredients

  • 1 lb. fresh large mushrooms
  • 4 scallions
  • salt
  • pepper
  • 1/2 cup butter
  • 1/2 lb. grated Cheddar cheese

Instructions

  1. Wash the mushrooms.
  2. Carefully remove stems from the mushroom caps.
  3. Chop the stems finely.
  4. Trim the root ends of the scallions and chop them, including the green tops.
  5. Melt 2 tablespoons of butter in a frying pan and sauté the chopped stems and scallions.
  6. Mix the sautéed stems and scallions with grated cheese in a bowl.
  7. Season with salt and pepper to taste.
  8. Melt the remaining butter.
  9. Brush the inside and outside of each mushroom cap with melted butter.
  10. Place the mushroom caps in a shallow baking pan.
  11. Mound the cheese mixture into each mushroom cap.
  12. Sprinkle with paprika.
  13. Bake at 375°F until the mushrooms are cooked and the cheese is bubbly.
