Cheese stuffed peppers are a savory, cheesy appetizer with seasoned vegetables, topped with crunchy breadcrumbs and paprika, perfect for entertaining or a flavorful snack.

Ingredients

  • 2 large green peppers, halved and seeded
  • 1/2 cup pasteurized cheese
  • 1/4 cup seasoned dry bread crumbs
  • 1/2 teaspoon paprika (optional)
  • boiling water
  • 1 (10 oz.) package frozen vegetables
  • 1 tablespoon butter or margarine, softened

Instructions

  1. In a medium saucepan, cook the peppers in boiling water to cover for 3 minutes; drain.
  2. Place the peppers in a baking dish, cut side up.
  3. Mix the cheese and frozen vegetables together.
  4. Fill the peppers with the cheese and vegetable mixture.
  5. In a small bowl, mix the bread crumbs and softened butter until blended.
  6. Sprinkle the breadcrumb mixture over the filled peppers.
  7. Sprinkle with paprika (optional).
  8. Bake in a preheated oven at 400°F for 15 minutes or until the vegetables are heated through and the crumbs are lightly browned.
