Ingredients

  • 4 eggs
  • 2 lb. small curd cottage cheese
  • 1/2 pint cream
  • 1 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla
  • 1 package Holland Rusk, rolled in fine crumbs
  • 1/2 cup melted butter or oleo
  • 1 cup sugar

Instructions

  1. Mix together the eggs, cottage cheese, and cream until well combined.
  2. Mix the sugar and flour together in a separate bowl.
  3. Add the vanilla to the egg mixture and stir thoroughly.
  4. Combine the crumbs, melted butter or oleo, 1 cup of sugar, and cinnamon; mix well.
  5. Reserve 1 cup of the crumb mixture for topping.
  6. Use the remaining crumb mixture to form the crust by pressing it evenly with fingers in an 8 x 12-inch glass pan.
  7. Spoon the egg mixture carefully over the crust.
  8. Sprinkle the reserved crumb topping evenly over the top.
  9. Bake at 350°F (175°C) for about 1 hour.
