- In a skillet, cook ground beef, chopped onion, salt, and pepper over medium heat until no longer pink. Drain and cool.
- Place two biscuits overlapping on a floured surface and roll out into a 5-inch oval.
- Put 3 tablespoons of the meat mixture on one side of the dough.
- Fold a slice of American cheese to fit over the meat mixture.
- Fold the dough over the filling to form a pocket.
- Press the edges with a fork to seal.
- Repeat with remaining biscuits, meat mixture, and cheese.
- Place the pockets on a greased baking sheet, prick the tops with a fork, and bake at 400°F for 10 minutes or until golden brown.
