Ingredients

  • 2 (16 oz.) packages frozen broccoli or 2 cups fresh washed broccoli
  • 4 beaten eggs
  • 2 cans cream of mushroom soup
  • 1/2 cup all-purpose flour
  • 4 tablespoons chopped pimentos
  • 2 cups grated cheese

Instructions

  1. Prepare pie crusts to line 2 pie pans.
  2. Add garlic salt instead of regular salt to crusts.
  3. Prick bottoms of crusts in pans.
  4. Bake crusts at 450°F (232°C) for 10 minutes.
  5. Remove from oven and reduce heat to 350°F (177°C).
  6. In a mixing bowl, combine beaten eggs, cream of mushroom soup, all-purpose flour, chopped pimentos, and grated cheese.
  7. Add cooked or thawed broccoli to the mixture and stir well.
  8. Pour the mixture into the prepared pie crusts.
  9. Bake in the oven at 350°F (177°C) for 20 minutes or until golden and set.
