Cheesy chalupas feature crispy tortillas topped with a flavorful bean and cheese mixture, complemented by fresh lettuce. Perfect for quick, tasty Mexican-inspired snacks or light meals.

Ingredients

  • 10 1/2 oz. can condensed bean with bacon soup
  • 1/2 c. dairy sour cream
  • 2 Tbsp. taco seasoning mix, dry
  • 4 oz. shredded Cheddar cheese
  • 4 oz. can green chilies, seeded and chopped
  • 1 tsp. instant minced onion
  • 12 corn tortillas
  • cooking oil
  • 2 c. shredded lettuce

Instructions

  1. In a 2-quart glass mixing bowl, combine the bean with bacon soup, sour cream, taco seasoning mix, chopped green chilies, and instant minced onion.
  2. Mix well to incorporate all ingredients.
  3. Cook the mixture on maximum power in the microwave, uncovered, for 5 to 6 minutes or until heated through, stirring twice during cooking.
  4. In a 10-inch skillet, brown tortillas one at a time in a small amount of hot oil until crisp, about 1 minute on each side.
  5. Drain the tortillas on paper toweling.
  6. To serve, place two tortillas on each plate and pour about 1/4 cup of the hot cheese mixture over each.
  7. Top with shredded lettuce, and optionally add tomatoes and onions as desired.
