Ingredients

  • 12 oz. boneless skinless chicken breasts
  • 1 envelope Parmesan Italian or Caesar salad dressing mix
  • 1 cup sliced fresh mushrooms
  • 1/2 cup sliced red onion
  • 1/4 cup vegetable oil
  • 4 submarine sandwich rolls
  • 4 slices Swiss cheese

Instructions

  1. Place chicken in a bowl; sprinkle with salad dressing mix.
  2. In a skillet, sauté mushrooms and red onion in oil for 3 minutes.
  3. Add chicken; sauté for 6 minutes, or until chicken juices run clear.
  4. Spoon mixture onto roll bottoms; top with Swiss cheese.
  5. Broil 4 inches from heat for 4 minutes or until cheese is melted.
  6. Replace tops of the rolls and serve.
