Cheesy confetti rice combines tender rice, green chiles, olives, pimento, and melted cheese for a flavorful, colorful dish perfect for family dinners or casual gatherings.

Ingredients

  • 1/4 cup margarine
  • 1 cup rice
  • 1/4 cup chopped onion
  • 2 1/2 cups water
  • 1 (4 oz) can mild green chiles, drained
  • 1 tablespoon chicken bouillon
  • 1 cup shredded Monterey cheese
  • 1/4 cup sliced ripe olives
  • 2 ounces diced pimento, drained
  • 2 tablespoons chopped parsley

Instructions

  1. In a 2-quart saucepan, melt the margarine.
  2. Add rice and chopped onion.
  3. Cook over medium heat, stirring, until rice is a golden color, about 8 to 10 minutes.
  4. Slowly add water, drained green chiles, and chicken bouillon.
  5. Continue cooking until mixture comes to a full boil, about 8 to 10 minutes.
  6. Reduce heat to low.
  7. Cover and simmer for 25 to 30 minutes.
  8. Stir in shredded Monterey cheese, sliced ripe olives, diced pimento, and chopped parsley.
  9. Serve immediately.
