- In a 2-quart saucepan, melt the margarine.
- Add rice and chopped onion.
- Cook over medium heat, stirring, until rice is a golden color, about 8 to 10 minutes.
- Slowly add water, drained green chiles, and chicken bouillon.
- Continue cooking until mixture comes to a full boil, about 8 to 10 minutes.
- Reduce heat to low.
- Cover and simmer for 25 to 30 minutes.
- Stir in shredded Monterey cheese, sliced ripe olives, diced pimento, and chopped parsley.
- Serve immediately.
