Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 3 teaspoons baking powder
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 cup canned whole kernel corn, drained
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Grease the bottoms of 12 muffin cups.
  2. In a bowl, combine all-purpose flour, cornmeal, sugar, salt, and baking powder.
  3. Mix well to evenly distribute the dry ingredients.
  4. Add milk, vegetable oil, and egg to the dry ingredients; stir just until the mixture is moistened.
  5. Fold in canned whole kernel corn and shredded Cheddar cheese.
  6. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for 20 to 25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Serve warm.
