Ingredients

  • 3 to 5 lb. red potatoes
  • 1 (16 oz.) carton French onion dip
  • 1 stick margarine
  • 1 (8 oz.) pkg. shredded Cheddar cheese
  • salt and pepper to taste

Instructions

  1. Peel and boil the potatoes until tender, then drain off the water.
  2. In a large mixing bowl, add the cooked potatoes, French onion dip, and margarine.
  3. Beat the mixture with an electric mixer until smooth and well combined.
  4. Add half of the shredded Cheddar cheese to the potato mixture and mix well.
  5. Pour the mixture into a shallow baking dish.
  6. Top with the remaining shredded Cheddar cheese.
  7. Bake at 350°F until the cheese melts and is bubbly, about 15 minutes.
