Ingredients

  • 1 2/3 lb. pollock or cod, cooked and picked
  • 2 Tbsp. grated onion
  • 2 Tbsp. plus 2 tsp. lemon juice
  • 1/3 stick butter, melted
  • 3 Tbsp. cracker crumbs
  • 1 tsp. salt
  • 1 1/3 c. milk
  • light dash of Tabasco
  • 1/4 tsp. baking soda
  • 1/4 c. chopped parsley
  • 4 eggs, well beaten

Instructions

  1. Mix the cooked and picked fish with grated onion, lemon juice, melted butter, chopped parsley, beaten eggs, milk, Tabasco, baking soda, and salt until well combined.
  2. Pour the mixture into a 2-quart casserole dish.
  3. Sprinkle cracker crumbs evenly over the top and dot with additional melted butter.
  4. Bake until the pudding is set and the top is golden brown, about 30 minutes.
  5. Serve hot with potatoes and slaw.
