Ingredients

  • 9 medium potatoes
  • 2 cups shredded Cheddar cheese
  • 1/4 cup margarine or butter
  • 1 (8 oz.) carton sour cream
  • 1 tablespoon chopped green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • paprika

Instructions

  1. Boil unpeeled potatoes for about 30 minutes, or until almost tender.
  2. Drain and cool slightly.
  3. Peel and shred the potatoes with a grater.
  4. In a large bowl, combine the shredded potatoes, shredded Cheddar cheese, and margarine. Stir until the margarine is melted.
  5. Stir in sour cream, chopped green onion, salt, and pepper.
  6. Transfer the mixture to a greased 2-quart casserole dish.
  7. Bake uncovered at 325°F (163°C) for 45 to 50 minutes, or until hot.
  8. Before serving, sprinkle with paprika.
