- In a large 10-inch pan, melt butter; stir in sugar and chopped dates.
- Remove from heat and add egg; beat and return to heat, cooking over medium heat and stirring constantly until mixture starts to boil.
- Remove from heat and add remaining ingredients except the 2 1/2 cups of coconut.
- Stir well and let stand about 20 minutes.
- You may cool in refrigerator.
- Roll into balls and roll in coconut.
- Enjoy as a festive treat, great for holidays or gift-giving. Can be frozen and used later.
