Cherry Date Cookies

Chewy cherry date cookies with toasted coconut and rice Krispies offer a delightful combination of sweetness, texture, and festive flavor, perfect for holiday treats or gift-giving.

Ingredients

  • 1 cup butter
  • 1 cup packed brown sugar
  • 8 ounces chopped dates
  • 1 egg
  • 1 tablespoon vanilla
  • 3 cups Rice Krispies
  • 1 cup flaked coconut
  • 1/2 cup candied cherries

Instructions

  1. In a large 10-inch pan, melt butter; stir in sugar and chopped dates.
  2. Remove from heat and add egg; beat and return to heat, cooking over medium heat and stirring constantly until mixture starts to boil.
  3. Remove from heat and add remaining ingredients except the 2 1/2 cups of coconut.
  4. Stir well and let stand about 20 minutes.
  5. You may cool in refrigerator.
  6. Roll into balls and roll in coconut.
  7. Enjoy as a festive treat, great for holidays or gift-giving. Can be frozen and used later.
