Cherry Pecan Bread offers a delightful combination of sweet cherries, crunchy pecans, and a moist, tender crumb, perfect for breakfast, snack, or dessert occasions.

Ingredients

  • 4 oz. jar maraschino cherries
  • 1 cup sugar
  • 1 egg
  • 1/4 cup cherry juice
  • 2 tablespoons melted oleo
  • 1 cup chopped pecans
  • 1/4 cup orange juice
  • 1/4 cup water
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon soda
  • 1 teaspoon salt

Instructions

  1. Pour off cherry juice and reserve.
  2. Quarter the maraschino cherries.
  3. In a mixing bowl, stir in sugar and melted oleo (butter or margarine).
  4. Add orange juice, reserved cherry juice, and water to the mixture.
  5. Mix well until combined.
  6. Sift together the flour, baking powder, soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing after each addition.
  8. Fold in chopped pecans and quartered cherries.
  9. Pour the batter into a greased loaf pan.
  10. Bake at 350°F (175°C) for 1 to 1 1/4 hours, or until a toothpick inserted in the center comes out clean.
  11. Glaze the cooled bread with a powdered sugar and milk mixture.
  12. Decorate with chopped cherries and pecans before serving.
