Ingredients

  • 1 cup margarine
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons vanilla
  • 4 eggs
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 can pie cherries

Instructions

  1. Mix margarine, sugar, vanilla, and eggs until well combined.
  2. Add flour, baking powder, and salt to the mixture and stir until a soft, sticky dough forms.
  3. Reserve about 1/4 of the dough aside.
  4. Press approximately 3/4 of the dough evenly into a greased sheet cake pan, making sure it appears thin but covers the bottom.
  5. Spread the can of pie cherries evenly over the dough in the pan.
  6. Take small portions of the remaining 1/4 dough, add a little flour if needed, and flatten between hands into thin patches.
  7. Place these patches randomly over the cherries, creating a patchwork effect.
  8. Bake at 350°F for 30 to 40 minutes, until the edges are golden brown and the top is firm.
